frozen Spinach, thawed and squeezed dry

Cream Cheese, softened

grated Parmesan cheese

Naan [flat bread], Ritz, pita chips or crostini for serving

Directions

Pre-heat oven to 350°F.

In a medium fry pan, cook bacon over medium heat, stirring occasionally, until browned and crisp. About 10 minutes. Drain bacon on paper towels. Discard all but 3 Tablespoon of fat from pan.

Add onion to pan, season with salt and pepper, and cook, stirring occasionally, until tender - about 8 minutes.

Add flour and cook 30 seconds. Add spinach, milk, sour cream and cream cheese. Cook stirring, until cream cheese melts, about 2 minutes. Stir in bacon and ¼ cup Parmesan cheese.

Transfer mixture to a 1½ quart baking dish. [8x8x2 glass is what I used] Top with remaining ¼ cup Parmesan - or more. Bake until top is bubbling about 15 minutes. Heat broiler and broil for about 3 minutes until top browns.

Let sit 5 minutes to cool a little - Serve and enjoy.
